Anytime Granola

 

INGREDIENTS

For the granola:
350g oats
1.5 tsp cinnamon
apple sauce (see below)
15 dates
60G tahini (or nut butter)
30ml olive oil
50g dates
20g coconut flakes
1 tsp vanilla
100g cashews
2 tbsp agave syrup
spray oil

For the apple sauce
1 apple (peeled, cored and sliced into quarters)
100ml water
40g dates
 

METHOD

For the apple sauce

  1. Add the chopped apple to a bowl and cover with the water. Microwave on high for 2 minutes. Add the dates and microwave for a further 1-2 minutes until the apple and dates are soft

  2. Drain off the water then blend the apples and dates in a mini processor with 2 tbsp water. Blend until a smooth puree forms


For the granola

  1. Turn oven to 150 C

  2. Combine the oats, cinnamon, coconut and cashews in a large bowl

  3. In a separate bowl combine the tahini, vanilla essence, oil and the premade apple puree then mix.

  4. Add the wet tahini mixture to the dry oat mix. Rub it in with your hands (like you would for an apple crumble mix)

  5. Line 2 baking trays with baking paper and spread the granola mix across them both. Drizzle over the agave syrup (1 tbsp per tray) and spray over some oil to evenly coat.

  6. Bake for 20 minutes, then stir (to break up any clumps) and add the dates. Spray with some more oil, then bake for another 15 minutes or until the oats are hard.

  7. Store in an air-tight jar.
