Gingerbread Energy Bites
Makes 24
INGREDIENTS
50g dates
50g cashews
50g walnuts
3 scoops vanilla protein powder (60g)
20g flaxseeds
4 tbsp oat flour
1.5 tbsp coconut milk
1 tbsp peanut butter
1.5 tsp ground cinnamon
1cm grated ginger
1 pinch grated nutmeg (1/4 tsp ground nutmeg)
40g raisins
1 tsp vanilla essence
1 tbsp agave syrup (optional)
30g rolled oats
METHOD

Add the dates, raisins and nuts together in a food processor and blend

Add the rest of the ingredients and blend to form a sticky mixture but not too oily. If it's too oily add more oat flour, alternatively if the mixture is too dry add a few drops of coconut milk

Shape into equally sized balls and coat with desiccated coconut and refrigerate.
